Imagine that you perform the experiment soaking a potato tuber tissue for 90 minutes and you check its mass periodically over the course of the experiment. At first, you notice that the tissue changes a lot between each check. However, after a while, each time you re-weigh the tissue you notice less of a difference from the time before. What is going on?

Solution

When potato is soaked in water, the water moves into the potato and it swells and becomes stiff. This is due to the phenomenon called Osmosis.

Osmosis is the diffusion of water across a semi-permeable membrane from an area of high concentration of water, to an area of low concentration. In other words, water moves from areas of less salt to area of high salt.
