What is the boiling point of water at 085 bar 1 bar and 2 ba
What is the boiling point of water at 0.85 bar, 1 bar, and 2 bar respectively? Interpret the results to elaborate why it takes a) longer to cook meat and potatoes on mountain tops b) shorter time to cook and potatoes in a pressure cooker.
Solution
From the water pressure and boiling point relationship table,
Boiling point of water at 0.85 bar is approx. 95o C
Boiling point of water at 1 bar is approx. 100o C
Boiling point of water at 2 bar is approx. 120o C
a) One mountain top,the atmospheric pressure decreases therefore the boiling point of water decreases. Therefore, the cooking time increases. Therefore, potatoes and meat take longer time to cook.
b) However, in a pressure cooker the pressure is increased, therefore boiling point of water also increases. Due to this the cooking time decreases. Therefore, potatoes and meat take less time to cook.
