The process here is osmosis.Osmosis can be demonstrated when potato slices are added to water. The water from outside the potato moves in to it, causing the potato to swell and to build up its \'turgor pressure\'. If instead of water a highly concentrated salt solution is used, the water inside the potato will move out to the less water containing salt solution causing the potato to shrink.The more concentrated the salt solution, the bigger the difference in size and weight of the potato slice.
