Firstly, lets clarify the simplest meaning of terms potential and kinetic energy. There are several forms of energy, and all have ability to appear as potential or kinetic energy. If the energy is due to motion - it is kinetic (example rolling ball), if it is due to the position and thus stored form - it is potential (example ball place in a platform at certain height).
Now coming to the question here, the radiant energy of the sun which is in kinetic form is absorbed by the chloroplasts in plants for photosynthesis. Hereby sugars and starch molecules are formed by photosynthesis where energy is stored as potential energy in chemical bonds of these molecules.
Now humans consume plants and thus this chemical energy containing complex molecules is moved to human body cells. Further digestion converts the sugar molecules in simple form by help of enzymes to be further used by cells which produces nutrients and energy for working of cells and thereby converting potential energy to kinetic energy. This conversion in cells occur in mitochondria, which is specialized organelle of cell for energy production. The energy is available in form of Adenosine Triphosphate (ATP) in muscle cells, where the triphosphate bond has the energy stored. Finally when needed the muscles cells respiration converts the chemical energy into mechanical work and heat energy , thus a conversion from potential to kinetic energy.
