Microbiological methods should be evolved to keep the food preserved afresh without contamination. For this purpose, food has to be stored after killing the microorganisms. Due to killing of microorganisms, decontamination could be avoided. During the storage of food for long term usage itself, it is important to predict the contamination through Salmonella and how to avoid the contamination. Any viable organisms should not be there before the storage. The bacteria have lag phase and generation phase. It is important to predict and assay the growth rate of a bacteria and its contamination should be avoided completely by removing any viable contaminants within the food stuff. Growth of these microorganisms could be observed even below -10oC. So it is important to remove any viable contamination from the food stuff to keep it fresh and eatable. Pasteurization or heat treatment kills contaminants but not all. Maintenance of anaerobic conditions after preservation also quite helpful to check contaminants further growth. Use of chemicals such as antioxidants, moisture retainers, stabilizers quite helpful as they interfere with the growth of microorganisms. Treating food with salt and sugar also helpful as these forces the ALL THE CELLS to leave their water through osmosis and thus the microbe die. Refrigeration only slows the growth of bacteria but not all. After some time again it is possible to see the food spoilage. Adding salts to food for preservation changes its nutritional value and high salt content is also not healthy. Whereas during the process of canning, the food is boiled to kill the microorganisms/endospores and then stored. This canned food has least nutritional value and is also taste gets changed.
