When phospholipids mixed with water the hydrophillic heads interact with water and the hydrophobic tails are repelled forming a lipid layer because the phospholipids consists of two fatty acids that is the hydrophilic and hydrophobic. the hydrophilic or insoluble in water whereas the hydrophobic is soluble in water. They would arrange themselves in two layer. The hydrophillic faces the water whereas the hydrophobic tail present inside the water. This means when the phospholipids interact with water the hydrophillic glycerol heads get attracted to the water whereas the hydrophobic fatty acids tails avoids the water.
