Solution

The outbreak of illness due to E. coli O157:H7 in 2006 in U.S occurred due to consumption of ready to eat packaged fresh spinach. The outbreak was traced at a food processing facility in California. Outbreak resulted in 199 infections, of these 102 individuals were hospitalized and 81 suffered by hemolytic uremic syndrome and three deaths were also reported. Though the contaminated spinach was distributed nationwide from California processing plant the disease was reported only in Wisconsin and Ohio. The E. coli O157:H7 was responsible for contamination of spinach was traced using pulse field gel electrophoresis. The fields where spinach cultivation carried out got contaminated by surface water used for irrigation and may also be due to the excreta of domestic cattle and pigs which found near the vicinity of spinach fields. Thus, spinach incident gives the important data. The role of centralized food- processing facilities in spreading the disease large and distant populations.

It is very important to identify the causal organisms responsible for food borne outbreak. In United States food borne outbreak are reported to centre for disease control and prevention through food net. National and regional Pulse Net organization from countries like United State, Canada, Europe, Asia, Latin-America, Caribbean and Middle East are under the Pulse net system. This organization collects and shares the molecular sub typing data from PFGE, DNA fingerprints of organisms implicated in food borne disease outbreak. Tracking the characteristics of food borne illness and identifying the causal organisms allows epidemiologists to identify the original source of contamination.  

Using sterilized equipments in food preparations, sanitization of floors and surfaces and using sterilized and purified water and food substrates reduces the outbreaks of food borne illenesses.
