8 A cracker crushed in water will test positive with iodine

8. A cracker crushed in water will test positive with iodine but negative with benedict’s solution. A cracker crushed in water has another chemical called amylase added to it. After a few minutes, this cracker tests negative with iodine and positive with benedict’s solution. Explain what happened.

Solution

A cracker which contains starch, tests positive with iodine solution but not Benedict\'s solution. This is because Benedict\'s solution is used to test for reducing sugars like glucose, galactose, fructose, maltose and lactose. When the cracker is added with amylase enzyme, amylase hydolyses starch into maltose, thus benedict\'s solution tests positive.
