high tempreture can disturb the secondry structure of a protein by disturbing hydrogen bond, and it can also disturb the hydrophobic interaction. Heat increases the kinetic energy and causes the molecule to vibrate so rapidly and its leads to disruption of hydrogen bond and hydrophobic interaction.
