Yeast consumes sugar (glucose) to generate carbon dioxide and water to produce energy. Yeast
can metabolize sugar in two ways, aerobically, with the aid of oxygen, or anaerobically, without
oxygen.
In aerobic respiration, each molecule of sugar gives six molecules of carbon dioxide.
C6Hl2O6 + 6 O2 gives 6 H2O + 6 CO2 + energy
In anaerobic respiration, each molecule of sugar gives two molecules of carbon dioxide.
C6Hl2O6 gives 2 CH3CH2OH + 2 CO2 + energy
So, amount of CO2 generated is proportional to amount of sugar consumed. It holds true for both aerobic and anerobic utilization
