Gelatinization is breaking down the intermolecular bonds of starch molecules and allowing the hydrogen bonding sites to interact with water. This irreversibly dissolves the starch granule in water.
GTR is the temperature range over which gelatinisation occur.
Higher temperature and longer time both increased the percentage gelatinized starch, as the time increases the percentage starch gelatinization also increases .
