The energy is stored in between the bonds of the fue molecules. This fuel can be anything lipids of carbohydrates.

The lipids are a more reduced form of carbohydrates. So they require more of oxygen to get completely oxidised as compared to carbohydrates and hence more than double of the energy is released per gram of substance.

The other reason is its density. SInce lipids are hydrophobic , they do not dissolve in water , hence are denser that otherwise water soluble carbohydrates. This is the reason they liberate more energy.
