celery stalk in salt water- when the previously intact celery cells placed in salt water and observed under the microscope it will be observed that the celery cells will have lost its water content due to osmosis. The celery in salt water (hypertonic solution) becomes soft, limp, mushy and looses its firmness.

celery stock in fresh water- Fresh water being hypotonic (low salt solution) than the celery the water will move in the celery cells and make it expanded. Under the microscope the cells on expanding will also look stiff due to soaking.

total mass of celery stock quantity incubated in salt water will be lower due to dehydration compared to the total mass of the same quantity celery stock incubated in fresh water where the water has been soaked up.
