HEre as 40% is lost in trim and bones, that means 60% of total amount of Chicken breast is given as 4lb.

So if total amount of breast for one person be x lb, then

60% of x = 4

or 0.6x = 4          or x= 4/0.6 = 40/6 = 6.66666 lb

so total Chicken breast required for 325 persons be = 325 x 6.66666 = 2166.67 ln

so last answer for first part is 2166.67 lb

total 87% of x lb =2

or 0.87x =2           or x = 2/0.87 =2.299 lb
