Ethanol, used in alcoholic beverages, can be produced by fermentation of sucrose. The balanced equation for the fermentation process is shown below. What mass of ethanol (C2H5OH) would be produced when 4.80 g sucrose reacts by this process?
 C12H22O11(s) + H2O(l)  4 C2H5OH(l) + 4 CO2(g)

Number of moles of sucrose = 4.80 g / 342.2965 g/mol = 0.0140 mole
from the balanced equation we can say that
1 mole of sucrose produces 4 mole of ethanol so
0.0140 mole of sucrose will produce
= 0.0140 mole of sucrose *( 4 mole of ethanol / 1 mole of sucrose )
= 0.0560 mole of ethanol
mass of 1 mole of ethanol = 46.07 g
so the mass of 0.0560 mole of ethanol = 2.58 g
Therefore, the mass of ethanol produced would be 2.58 g
