1) Compared to animal fats,in general vegetable oils contain higher proportion of unsaturated fatty acids.Unsaturated fats are classified into Polyunsaturated and monounsaturated fats. Monounsaturated fats have only one double bond in their molecular structure,where as polyunsaturated have more than one double bond in their structure.The fatty acids lacking double bond between carbon-carbon are classified as saturated fatty acids,fatty acids having double bond between carbon-carbon are classified as unsaturated fatty acids.

2) Partial amounts of natural Trans fatty acids are found in animal fats,but aritificial Trans fatty acids are created by reacting hydrogen gas to liquid vegetable oils at around 60 degrees,in this way unsaturated fats can be made into saturated fats.These aritificial Trans fats are used high quantities in fast food industries,as these  inexpensive,can be used for long times.
