Theses radiations destroy the bacterial DNA and their cell membranes. Bacterial replication requires DNA, so when energy strikes the DNA it breaks open the DNA strand. The damage is so severe, that it cannot repair itself, and so the bacteria dies.

Hence irradiation prevents bacterial growth. A very important application to preserve food materials for longer time durations.
