Obviously 350 degF was intended. 70degF is your ambient temperature to which the bread eventually will cool. What is of interest are the delta temperatures. Starting delta: 350-70 = 280degF First delta: 210-70 = 140degF % cooled in 20 minutes: 140/180 = 0.5 = 50% Second delta: 160-70 = 90degF %cooled: 90/180 = 0.5 = 50%
