sensitivity is the ration of change in output(voltage) to the change in input(temperature).that is the local slope of output(mv) vs input(degree C) at that point. For a linear device slope is independent of input .

Slope of given curve=(change in o/p)/(change in i/p)=(8.74-4.37)/(500-250)=(13.11-8.74)/(750-250)=(17.48-13.11)/(1000-750)=0.01748 mv/C
