Pasteurization is a heat treatment method of food preservation that kills the microorganisms present in the food. It involves a low heat treatment procedure so the nutrient value of food is not lost.

Sterlisation is another form of thermal processing of food which uses high temperature to increase the shelf life of food products. The main objective of this method is to destroy the spores of bacteria which cannot be destroyed with any other method.

Sterlisation involves heating of food at 110° to 120 whereas pasteurization involves heating at 70 to 80°C.
